For the Chicken Loaf

  • 1 lb ground chicken Use ground chicken thighs for added moisture if desired.
  • 1 cup breadcrumbs Fresh breadcrumbs are recommended for better texture.
  • 1/2 cup grated Parmesan cheese This adds a rich flavor to the loaf.
  • 1 cup shredded mozzarella cheese For topping and creaminess.
  • 2 cloves garlic, minced Fresh garlic enhances the flavor.
  • 1 piece egg Acts as a binder.
  • 1/4 cup parsley, chopped Adds freshness.
  • 1 tsp Italian seasoning For flavor depth.
  • Salt and pepper to taste Adjust according to preference.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine the ground chicken, breadcrumbs, 1/2 cup of Parmesan cheese, 1/2 cup of mozzarella cheese, minced garlic, egg, parsley, Italian seasoning, salt, and pepper. Mix well until all ingredients are fully combined.
  • Transfer the mixture to a loaf pan, shaping it firmly into a loaf shape and smoothing the top for even cooking.
  • Sprinkle the remaining mozzarella cheese and Parmesan cheese on top of the loaf.

Cooking

  • Place the loaf in the oven and bake for 45 minutes or until it reaches an internal temperature of 165°F (73°C).
  • Allow the chicken loaf to rest for about 10 minutes before slicing.

Notes

To retain moisture, avoid overcooking. Leftovers can be refrigerated for 3-4 days or frozen for up to 2 months. Thaw overnight and reheat in the oven at 350°F (175°C) for 20 minutes.
