  • 4 pieces chicken breasts
  • 8 oz mushrooms, chopped Use fresh for best flavor.
  • 3 cloves garlic, minced
  • 1 cup cream cheese, softened
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 1/4 cup butter Melted.
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper Adjust to your taste.
  • for garnish Fresh parsley

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a skillet, melt butter over medium heat. Add garlic and mushrooms, cooking until soft.
  • In a mixing bowl, combine the cooked mushrooms and garlic with cream cheese, shredded cheese, Italian seasoning, salt, and pepper.
  • Cut a pocket in each chicken breast and stuff with the cheese mixture.

Baking

  • Place the stuffed chicken in a baking dish and bake for 25-30 minutes or until the chicken is cooked through.
  • Garnish with fresh parsley before serving.

Notes

Serve hot with steamed vegetables, mashed potatoes, or salad. Can be sliced to display the filling. Store leftovers in an airtight container for up to 3 days or freeze before baking.
