  • 2 large eggs

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon salt

Additions

  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon chopped fresh herbs (like parsley or chives, optional)

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a large mixing bowl, whisk together the cottage cheese, milk, and eggs until thoroughly mixed and creamy.
  • In a separate bowl, whisk the all-purpose flour, baking powder, garlic powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix.
  • Fold in the shredded cheese and fresh herbs, if using.

Baking

  • Grease a loaf pan and pour the batter in, spreading it evenly.
  • Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted comes out clean.
  • Allow the bread to cool for 10 minutes in the pan before transferring it to a wire rack. Slice and enjoy warm.

Notes

Consider using low-fat or fat-free cottage cheese. Keep an eye on the bread in the last 5 minutes of baking to avoid over-browning. Make sure to drain the cottage cheese well before use.
