Ingredients

  • 2 cups cooked rice white or brown
  • 2 cups fresh or frozen broccoli florets
  • 1 cup sharp cheddar cheese shredded
  • 1/2 cup cream cheese softened
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • salt and pepper to taste
  • 1/2 cup breadcrumbs for topping
  • 2 tablespoons butter melted

Instructions

  • Preheat your oven to 350°F (175°C).
  • If you're using fresh broccoli, steam it until just tender, about 3-4 minutes. If frozen, simply thaw and drain.
  • In a large mixing bowl, combine the cooked rice, steamed broccoli, shredded cheddar cheese, softened cream cheese, milk, garlic powder, onion powder, salt, and pepper. Mix until thoroughly combined.
  • Grease a 9×13-inch baking dish and pour the mixture into it, spreading it evenly.
  • In a separate bowl, combine breadcrumbs with melted butter. Sprinkle this mixture evenly over the top of the casserole.
  • Place the casserole in the preheated oven and bake for about 25-30 minutes, or until bubbly and the top is golden brown.
  • Once out of the oven, let it cool for a few minutes before serving.
