  • 1 cup finely chopped broccoli Fresh or frozen, chopped finely

  • 2 large eggs Binding agent to hold everything together
  • 1/2 cup breadcrumbs For a crispy exterior
  • 1/2 teaspoon garlic powder For added flavor

Preparation

  • Preheat your oven to 375°F (190°C).
  • Rinse and cook one cup of quinoa following package instructions.
  • Chop fresh broccoli finely or thaw and drain any frozen broccoli.

Mixing and Forming

  • In a large mixing bowl, combine cooked quinoa, chopped broccoli, shredded cheese, eggs, breadcrumbs, garlic powder, salt, and pepper. Stir until well incorporated.
  • With clean hands, shape the mixture into small bite-sized balls or patties.

Baking

  • Place the shaped bites onto a greased baking sheet, leaving enough space for even cooking.
  • Bake for about 20-25 minutes until golden brown and crispy on the outside.
