  • 2 cups cooked chicken (diced or shredded)
  • 2 cups cooked rice
  • 2 cups broccoli florets (fresh or frozen)
  • 1 can cream of chicken soup (or a homemade substitute)
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • ½ cup milk
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup breadcrumbs (optional for topping)

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the cooked chicken, cooked rice, broccoli florets, cream of chicken soup, milk, garlic powder, salt, and pepper. Stir until everything is well mixed.
  • Pour your mixture into a greased 9x13-inch baking dish, spreading it evenly.

Topping and Baking

  • Sprinkle the shredded cheddar cheese on top. If desired, layer the breadcrumbs over the cheese.
  • Place the baking dish in the preheated oven, baking for about 25-30 minutes, until the cheese is bubbly and slightly golden.

Serving

  • Remove from the oven and let it cool for a few minutes before serving.

Notes

Using leftover chicken saves time; minute rice or any cooked grain can work in place of cooked rice. Feel free to add other vegetables like bell peppers or cooked quinoa for additional flavor and nutrition.
