Crispy on the outside and gooey on the inside, these Cheesy Broccoli Bites are a delicious way to sneak in vegetables for the whole family.

Ingredients
  

Main Ingredients

  • 2 cups fresh broccoli florets or frozen, thawed and chopped
  • 1 cup shredded cheese cheddar works best, but feel free to mix it up
  • 1/2 cup breadcrumbs
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for drizzling

Preparation

  • Preheat your oven to 375°F (190°C).
  • If you’re using fresh broccoli, steam or boil it just until tender, then chop it finely. If using frozen, make sure it’s thawed and well-drained.
  • In a large mixing bowl, combine the chopped broccoli, shredded cheese, breadcrumbs, eggs, Parmesan cheese, garlic powder, salt, and pepper. Stir until everything is well mixed.

Shaping and Baking

  • Using your hands, scoop about a tablespoon of the mixture and roll them into small balls. Place them on a lined baking sheet.
  • Drizzle a little olive oil on top of the bites and pop them in the oven.
  • Bake for about 15-20 minutes or until they turn golden brown and crispy.

Serving

  • Once baked, remove them from the oven and let them cool slightly before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven at 350°F (175°C) for 10-15 minutes until warm and crispy. You can also freeze them for up to three months.
