  • 1 pound fresh strawberries Choose ripe and firm strawberries.
  • 8 oz cream cheese, softened Leave at room temperature for about 30 minutes prior to mixing.
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup whipped cream (optional) For a lighter filling.
  • Crushed graham crackers (optional for topping) To add a classic cheesecake crunch.

Preparation

  • Start by rinsing your strawberries under cold water. Pat them dry with a paper towel. Cut the tops off and carefully hollow out the insides with a small spoon or melon baller.
  • In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Use an electric mixer or a whisk to blend until smooth and creamy. Fold in whipped cream if you prefer a lighter filling.
  • Using a piping bag or a small spoon, fill each hollowed strawberry with the cheesecake filling generously.
  • Sprinkle some crushed graham crackers on top of each stuffed strawberry for that classic cheesecake crunch, if desired.
  • Refrigerate the stuffed strawberries for about 30 minutes to let the flavors meld. Serve them chilled.

Notes

Select ripe and firm strawberries for filling. Store leftovers in an airtight container in the fridge for up to 2 days.
