  • 8 ounces Penne pasta Cook according to package instructions.
  • 8 ounces Shrimp Fresh or properly thawed if frozen.
  • 3 cups Fresh spinach

Flavoring Ingredients

  • 1 tablespoon Olive oil For sautéing.
  • 2 cloves Garlic Minced.
  • 1 teaspoon Salt To taste.
  • 1 teaspoon Pepper To taste.

Cheese

  • 1 cup Cheese (Parmesan or Mozzarella) Can adjust based on preference.

Preparation

  • Cook the penne pasta according to package instructions, then drain.

Cooking

  • In a large skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
  • Add shrimp to the skillet and cook until they turn pink.
  • Stir in fresh spinach and cook until wilted.
  • Combine the cooked pasta with the shrimp and spinach mixture.
  • Add cheese, salt, and pepper to taste.
  • Serve hot.

Notes

To store leftovers, let pasta cool completely, then store in an airtight container in the refrigerator for 3-4 days, or freeze for up to two months. Thaw in the refrigerator and reheat before serving.
