  • 8 oz Penne pasta Cook according to package instructions
  • 1 lb Shrimp Peeled and deveined

Cheese and Greens

  • 1 cup Cheese (such as parmesan or mozzarella) Grated
  • 4 cups Fresh spinach Washed and chopped

Cooking Essentials

  • 2 tbsp Olive oil For sautéing
  • 2 cloves Garlic Minced
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1/4 tsp Red pepper flakes Optional for heat

Preparation

  • Cook the penne pasta according to package instructions, then drain and set aside.

Cooking

  • In a large skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
  • Add shrimp to the skillet and cook until pink and opaque.
  • Stir in fresh spinach and cook until wilted.
  • Combine the cooked pasta with the shrimp and spinach mixture.
  • Add cheese, salt, pepper, and red pepper flakes if desired.
  • Toss everything together until well combined and heated through. Serve warm.

Notes

Make sure to cook the shrimp just until they turn pink; overcooking can make them tough. Use fresh spinach for the best flavor. Experiment with different cheeses for variety.
