  • 1 lb ground beef You can substitute with ground chicken or turkey for a lighter version.
  • 1 small onion, diced Adds flavor to the filling.
  • 1 clove garlic, minced Enhances the savory aroma.
  • 1 cup beef broth Can be adjusted for desired moisture.
  • 1 cup frozen mixed vegetables Adds nutrition and flavor.
  • Salt and pepper to taste For seasoning.
  • 2 tablespoons olive oil For cooking the beef and vegetables.

For the Biscuit Topping

  • 2 cups cheddar bay biscuit mix Follow package instructions for preparation.
  • 1 cup shredded cheddar cheese Incorporated into the biscuit mix for added flavor.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic; sauté until onions are translucent.
  • Add ground beef to the skillet, breaking it apart as it cooks. Season with salt and pepper, and cook until browned.
  • Stir in the frozen mixed vegetables and cook for an additional 3-4 minutes.
  • Mix in the beef broth and thoroughly combine. Transfer to a greased 9×9-inch baking dish.
  • Prepare the biscuit mix according to package instructions and spread it over the beef and vegetable mixture.

Baking

  • Bake in the preheated oven for about 20-25 minutes, or until the biscuit topping is golden brown.
  • Let cool slightly before serving.

Notes

If you have leftovers, store them in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat in the oven at 350°F until warmed through.
