Ingredients
  

For the Filling

  • 1 lb shrimp, peeled and deveined
  • 1 lb white fish fillet (like cod or tilapia), cut into bite-sized pieces
  • 1 cup heavy cream
  • 2 cups vegetable broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 2 tbsp olive oil

For the Cheddar Bay Biscuits

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 cup unsalted butter, cold and cubed
  • 1 cup shredded cheddar cheese
  • 1 cup whole milk
  • 1/2 tsp garlic powder
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions
 

Preparation

  • In a large skillet over medium heat, add olive oil. Once hot, add chopped onion and sauté for about 3 minutes until translucent.
  • Add minced garlic and cook for another minute until fragrant.
  • Pour in vegetable broth and bring to a simmer. Add the heavy cream and stir well.
  • Mix in the shrimp, fish pieces, frozen peas, carrots, salt, pepper, and paprika. Cook until the seafood is cooked through, about 5-7 minutes. Remove from heat and set aside.

Prepare the Biscuits

  • In a large mixing bowl, combine the flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  • Stir in cheddar cheese and garlic powder. Gradually pour in milk, mixing until just combined (do not overmix).

Assemble the Pot Pie

  • Preheat your oven to 400°F (200°C).
  • In a deep dish, pour in the seafood filling, ensuring it’s evenly spread.
  • Drop spoonfuls of the biscuit dough over the top of the filling, covering as much of the surface as possible.

Bake

  • Place the dish in the preheated oven and bake for about 25-30 minutes, or until the biscuits are golden brown and cooked through.

Serve
