  • 1 head head of cauliflower
  • 1 cup shredded cheese (cheddar or mozzarella) Ensure it's Halal-friendly.
  • 2 large eggs
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Butter or oil for frying

Preparation

  • Wash and cut the cauliflower into smaller florets. If you have a food processor, pulse the florets until they resemble rice grains.
  • Steam the riced cauliflower for about 5 minutes until tender. Allow it to cool slightly, then place it in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible.
  • In a mixing bowl, combine the drained cauliflower, shredded cheese, eggs, garlic powder, salt, and pepper. Stir until well combined.
  • Take small portions of the mixture and shape them into patties, about 1/2 inch thick.

Cooking

  • Heat a non-stick skillet over medium heat and add butter or oil. Once hot, add the cauliflower patties to the skillet.
  • Cook for about 3–4 minutes on each side until golden brown and crispy.

Serving

  • Remove from the skillet and serve immediately with your favorite dipping sauce or toppings.

Notes

Feel free to use different types of cheese for variations. Store in the fridge for up to 3 days or freeze individually for up to 3 months. Reheat in a skillet or oven.
