  • 1 lb ground beef or turkey Can swap for shredded chicken or lentils for a vegetarian option.
  • 1 cup chopped onion
  • 1 cup bell pepper, diced
  • 1 can (15 oz) diced tomatoes (undrained)
  • 1 cup corn (frozen or canned)
  • 1 cup black beans (drained and rinsed)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 2 cups cooked rice
  • 1 packet taco seasoning
  • Salt and pepper to taste
  • Optional: chopped fresh cilantro for garnish

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium-high heat, brown the ground beef or turkey until no longer pink. Drain any excess fat if necessary.
  • Stir in the chopped onion and bell pepper, cooking until softened, about 5 minutes.
  • Add the diced tomatoes (with juices), corn, black beans, cooked rice, taco seasoning, salt, and pepper to the meat mixture. Stir everything well to combine.
  • Transfer the mixture into a greased 9x13 inch baking dish. Spread it out evenly, then sprinkle shredded cheese over the top.

Cooking

  • Place the dish in the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden.
  • Remove the casserole from the oven and let it cool slightly before serving. Garnish with fresh cilantro if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven or microwave.
