  • 1 cup milk Dairy or non-dairy, your choice.
  • 1 cup shredded carrots Provides flavor and nutrition.
  • 1 tablespoon maple syrup Can be substituted with honey.
  • 1 teaspoon vanilla extract Adds flavor.
  • 1 teaspoon ground cinnamon Gives a warm, spiced flavor.
  • 1/4 teaspoon nutmeg Complementary spice.
  • a pinch salt Enhances flavors.

  • to taste chopped walnuts For added crunch.

Preparation

  • In a medium-sized bowl, mix the rolled oats, ground cinnamon, nutmeg, and salt.
  • In a separate bowl, whisk together the milk, shredded carrots, maple syrup, and vanilla extract until well combined.
  • Slowly pour the wet mixture into the dry ingredients. Stir until all the oats are coated and everything is evenly combined.
  • Divide the oat mixture into your favorite jars or containers, sealing them tightly.
  • Place the jars in the refrigerator and let them sit overnight, or for at least 4 hours.

Serving

  • In the morning, take your oats out of the fridge and give them a good stir.
  • Top with your choice of walnuts, raisins, coconut, or yogurt for that extra flair. Enjoy!

Notes

Store jars in the fridge for up to 5 days. For warm oats, microwave for about 30 seconds after mixing well and adding a splash of milk.
