For the dip

  • 2 large large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 cup Gruyere cheese, grated substitute with Swiss or Monterey Jack if unavailable
  • 1 cup cream cheese
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Chives for garnish (optional)
  • Bread or crackers for serving

Preparation

  • Caramelize the Onions: In a large skillet, heat the olive oil over medium heat. Add the sliced onions and stir them well. Cook slowly, stirring occasionally, for about 25-30 minutes or until they caramelize to a deep golden brown.
  • Mix the Base: In a large mixing bowl, combine the cream cheese, sour cream, grated Gruyere, garlic powder, salt, and pepper. Stir until smooth and well-combined.
  • Combine: Once the onions are caramelized, stir them into the cheese mixture until evenly mixed.
  • Bake: Preheat your oven to 350°F (175°C). Transfer the dip into a baking dish and spread it out evenly. Bake for about 15-20 minutes, or until warmed through and bubbly.
  • Garnish and Serve: Remove from the oven, garnish with fresh chives if desired, and serve warm with bread or crackers.

Notes

Store leftover dip in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat in the oven or microwave.
