Ingredients
  

For the Bars

  • 2 cups grated zucchini, well-drained Make sure to squeeze out excess liquid.
  • 1 cup all-purpose flour You can substitute half for whole wheat flour.
  • 1/2 cup rolled oats
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted and cooled
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt

For the Frosting

  • 1/2 cup caramel sauce
  • 1/4 cup powdered sugar

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper.
  • Grate 2 cups of zucchini, then squeeze out the excess moisture using a clean kitchen towel.

Mixing

  • In a large bowl, whisk together the all-purpose flour, rolled oats, baking soda, baking powder, and salt.
  • In another bowl, combine melted butter, brown sugar, granulated sugar, eggs, and vanilla extract. Mix until well blended.
  • Gradually add the wet mixture to the dry ingredients. Stir gently to combine, making sure not to overmix. Fold in the grated zucchini.

Baking

  • Pour the batter into the prepared pan and spread it evenly. Bake for 25 minutes, or until a toothpick inserted into the center comes out clean.

Frosting

  • While the bars are cooling, whisk together the caramel sauce and powdered sugar until smooth.
  • Once the bars are completely cooled, drizzle the caramel frosting over the top, cut into squares, and serve.

Notes

Store in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week. Freezes well for up to 3 months.
