Ingredients

Preparation

  • Preheat your oven to 325°F (160°C) and grease a 9x9 inch baking dish.
  • In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix well and press the mixture evenly into the bottom of the prepared baking dish. Bake for 10 minutes and let it cool.

Filling

  • In a large mixing bowl, beat the softened cream cheese with a hand mixer until smooth.
  • Gradually add sugar and vanilla extract, beating until well combined.
  • Add eggs one at a time, mixing just until incorporated.
  • Pour the cream cheese mixture over the cooled crust and spread evenly.

Topping and Baking

  • In a separate bowl, toss the diced apples with cinnamon and sugar. Sprinkle evenly over the cheesecake layer.
  • Bake in the preheated oven for 30-35 minutes or until the center is set.

Finishing Touches

  • Allow the bars to cool completely in the baking dish.
  • Once cooled, drizzle the caramel sauce over the top.
