  • 1 cup long-grain rice
  • 1 pound shrimp, peeled and deveined
  • 1 pound smoked sausage, sliced
  • 1 medium onion, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 2 tablespoons Cajun seasoning
  • to taste Salt and pepper
  • 2 green onions, chopped for garnish
  • 2 tablespoons olive oil

Preparation

  • In a large skillet, heat about 2 tablespoons of olive oil over medium heat. Add the diced onion, bell pepper, and celery. Cook until softened, around 5–7 minutes. Stir in the minced garlic and cook for another minute.
  • Toss in the sliced sausage and cook until browned, about 5 minutes, stirring occasionally.
  • Add the rice to the skillet and stir everything together, allowing the rice to absorb the flavors for about 2 minutes.
  • Pour in the chicken broth and add the Cajun seasoning. Stir well to combine and bring the mixture to a boil.
  • Once boiling, reduce the heat to low and cover the skillet. Let the rice gently simmer for 18–20 minutes, or until the rice is cooked and has absorbed most of the liquid.
  • Carefully stir in the shrimp during the last 5 minutes of cooking. Continue to simmer until the shrimp are fully cooked and pink.
  • Taste and adjust seasoning as needed with salt and pepper. Serve hot, garnished with chopped green onions.

Notes

For substitution ideas, shrimp can be swapped with chicken or other proteins. Watch the amount of Cajun seasoning to adjust spiciness to your preference.
