Preparation

  • Season the chicken breasts with salt, pepper, and Cajun seasoning, ensuring even coverage.

Cooking the Chicken

  • In a skillet, heat a tablespoon of oil over medium-high heat. Once hot, add the seasoned chicken breasts.
  • Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the skillet and let rest.

Preparing the Grits

  • In a pot, bring the chicken broth to a boil. Slowly stir in the grits and reduce the heat to low.
  • Cook, stirring frequently, for about 20-25 minutes or until thickened.
  • Once thickened, stir in the butter, milk, and cheddar cheese until creamy and smooth.
  • Adjust the consistency by adding more milk if desired.

Serving

  • Slice the cooked chicken and serve over a generous scoop of cheesy grits.
  • Garnish with chopped green onions if desired.

Notes
