  • 1 cup brown sugar
  • 2 cups flour Can be substituted with gluten-free flour for a gluten-free option.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt Reduce amount if using salted butter.
  • 1 cup butterscotch chips Feel free to add more to taste.
  • 1 cup chopped nuts Optional ingredient; you can vary the type of nuts used.
  • 1 teaspoon vanilla extract

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, cream together the butter and brown sugar until light and fluffy.
  • Gradually add in the flour, baking powder, and salt. Mix until combined.
  • Stir in the butterscotch chips, nuts (if using), and vanilla extract.
  • Spread the batter into a greased baking pan.

Baking

  • Bake for 25-30 minutes, or until the bars are golden brown.
  • Let cool before cutting into bars.

Notes

These bars are delicious on their own or served with a scoop of vanilla ice cream. Store leftovers in an airtight container at room temperature for up to a week, or freeze for longer storage.
