  • 1 medium butternut squash, peeled and diced
  • 2 large onions, sliced
  • 1 sheet of puff pastry Check to ensure it's halal-friendly
  • 2 tablespoons olive oil

  • 1 teaspoon fresh thyme (or other herbs of choice)
  • 1/2 cup grated cheese (such as Gruyère or feta)
  • 1 large egg (optional, for egg wash)

Preparation

  • Preheat your oven to 400°F (200°C).
  • Heat a skillet over medium heat and add the olive oil. Add the sliced onions and a pinch of salt. Cook for about 20 minutes, stirring occasionally, until soft and golden brown.
  • Arrange the diced butternut squash on a baking sheet, drizzle with olive oil, sprinkle with salt and pepper, and roast for 20-25 minutes until tender and slightly caramelized.
  • Roll out the puff pastry on a lightly floured surface to fit your tart pan and press it gently into the pan, trimming any excess.

Assembly and Baking

  • Fill the prepared pastry shell with the cooked onions and butternut squash, sprinkled with fresh thyme and cheese.
  • If desired, whisk the egg and brush it on the edges of the pastry for a glossy finish.
  • Bake in the preheated oven for 25-30 minutes until golden brown and cheese is melted.
  • Allow to cool slightly before slicing and serve warm or at room temperature.

Notes

Top with creamy feta or mozzarella cheese for added flavor. Be cautious with onion timing to avoid burning. Pre-baking pastry for 5-10 minutes can prevent a soggy bottom.
