  • 1 tablespoon butter For grilling.

Preparation

  • In a bowl, mix the shredded chicken with buffalo sauce until well coated.

Cooking

  • Heat a skillet over medium heat and melt the butter.
  • Place one slice of bread in the skillet.
  • Add half of the cheddar cheese on the bread, followed by the buffalo chicken mixture, and then the remaining cheese.
  • Top with the second slice of bread.
  • Cook until the bottom is golden brown, then flip and cook the other side until golden and the cheese is melted.
  • Remove from heat, slice, and serve with dressing if desired.

Notes

If you have leftovers, let the sandwiches cool down and wrap them tightly for storage in the fridge for up to 2 days. Reheat in a skillet on low heat for best texture. For a healthier option, try whole grain bread and add spinach or eluding other greens.
