Ingredients
  

For the Chicken Filling

  • 2 cups cooked shredded chicken Use rotisserie chicken for convenience.
  • 1/2 cup Buffalo sauce Adjust based on spice preference.
  • 1 cup shredded cheddar cheese

For the Egg Rolls

  • 1 package egg roll wrappers
  • Oil for frying vegetable or canola oil Approximately 2 inches of oil needed for frying.
  • Optional sliced green onions or blue cheese for garnish Enhances flavor and presentation.

Instructions
 

Preparation

  • In a mixing bowl, combine the shredded chicken and Buffalo sauce. Stir to ensure the chicken is thoroughly coated.
  • Fold in the shredded cheddar cheese until well mixed.

Assembly

  • Lay one egg roll wrapper flat on a clean surface, with a corner pointing toward you. Place about 2 tablespoons of the Buffalo chicken mixture in the center and fold the bottom corner over the filling.
  • Fold in the sides of the wrapper and roll it up tightly, sealing the end with a dab of water.

Frying

  • In a deep frying pan or pot, heat about 2 inches of oil to 350°F (175°C).
  • Carefully place a few egg rolls in the hot oil, avoiding overcrowding, and fry for 2-3 minutes on each side, or until they are golden brown.

Serving

  • Once cooked, remove egg rolls and place them on a paper towel to drain excess oil. Serve them warm with your favorite dipping sauces.

Notes

For a Halal-friendly version, ensure your chicken is halal-certified. You can also use turkey or a plant-based protein as alternatives. Store in an airtight container in the refrigerator for up to 3 days or freeze uncooked egg rolls for up to 2 months.
