  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup buffalo sauce (ensure it’s halal-compliant)

For serving

Preparation

  • Preheat your oven to 450°F (230°C) and let it heat up while you prepare the cauliflower.
  • In a large bowl, combine the flour, water (or plant-based milk), garlic powder, onion powder, smoked paprika, salt, and pepper. Whisk until you have a smooth batter.
  • Dip each cauliflower floret into the batter, ensuring they are fully coated; gently shake off any excess batter.
  • Spread the florets evenly on a lined baking sheet, ensuring they aren’t touching for optimal crispiness.

Baking

  • Place in the oven and bake for about 20 minutes until they are golden brown and crispy.
  • Remove from the oven and gently toss the baked cauliflower in buffalo sauce until well-coated.
  • Return the wings to the oven and bake for an additional 10-15 minutes to allow the sauce to adhere.
  • Remove from the oven and serve hot with your choice of healthy dips like vegan ranch or alongside fresh veggies!

Notes

For a gluten-free version, swap out the all-purpose flour for a gluten-free blend. Keep an eye on the cauliflower towards the end of cooking to avoid over-browning. Avoid overcrowding the baking sheet to help them crisp up beautifully. Store leftovers in an airtight container for up to 3 days or freeze for up to a month before baking. Reheat in a preheated oven at 375°F (190°C) for about 10-15 minutes or use an air fryer.
