Ingredients

For the Brownies

  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 cup unsalted butter, melted
  • 4 large eggs Room temperature
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

For the Peanut Butter Layer

  • 1 cup creamy peanut butter
  • 2 cups powdered sugar
  • 1/4 cup unsalted butter, softened

For the Chocolate Topping

  • 1 cup semi-sweet chocolate chips Use high-quality chocolate
  • 2 tablespoons vegetable oil

Instructions

Preparation

  • Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • In a large mixing bowl, combine the granulated sugar, brown sugar, and melted butter. Mix until smooth. Add the eggs one at a time, mixing well after each addition, and stir in the vanilla extract.
  • Sift together the flour, cocoa powder, baking powder, and salt in another bowl. Gradually add the dry ingredients to the wet mixture until fully combined.
  • Spread the brownie batter evenly into the prepared baking dish. Bake for 25-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Remove from the oven and let it cool completely.
  • While the brownies cool, combine the peanut butter, powdered sugar, and softened butter in a mixing bowl. Mix well until smooth and creamy.
  • Once the brownies are cool, spread the peanut butter mixture evenly over the brownie base.
  • In a small saucepan, melt the chocolate chips and vegetable oil over low heat. Stir until smooth.
  • Pour the melted chocolate over the peanut butter layer, smoothing it out with a spatula.
  • Let the brownies set in the refrigerator for at least 1 hour before slicing into squares. Enjoy!

Notes

Room temperature ingredients help to create a smooth batter. Customize your toppings by adding chopped nuts for extra texture. Don't overbake for the fudgiest brownies.
