Preparation

  • Preheat your oven to 400°F (200°C).
  • Peel the butternut squash and slice it in half lengthwise. Remove the seeds and scoop out the strings, then chop the squash into 1-inch cubes.

Mix and Roast

  • In a large mixing bowl, combine the cubed squash, olive oil, brown sugar, cinnamon, nutmeg, salt, and pepper. Toss until the squash is evenly coated.
  • Spread the seasoned squash onto a lined baking sheet in a single layer. Roast for about 25-30 minutes, or until tender and caramelized, stirring occasionally.

Serving

  • Once roasted, remove from the oven and let it cool slightly. Serve warm as a side dish or toss in a salad.

Notes

Store leftovers in an airtight container for up to 4 days. Can freeze for up to 3 months. Reheat in the oven or microwave. Consider pairing with savory proteins or a crisp salad.
