Preparation

  • Preheat your oven to 350°F (180°C).
  • In a large bowl, cream together the softened butter and brown sugar for about 1 to 2 minutes until light and fluffy.
  • Beat in the egg and vanilla extract, mixing until well combined.
  • In a separate bowl, whisk together the flour, baking soda, ground cinnamon, and salt. Gradually add this to the wet ingredients, stirring just until combined.
  • Gently fold in the caramel bits.
  • Drop rounded balls of dough onto a lined baking sheet, spacing them about 2 inches apart.
  • Bake for 10 to 12 minutes or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

To store, keep cookies in an airtight container at room temperature for up to a week or freeze for about 2 months. Reheat by allowing to come to room temperature or warming in the oven for about 5 minutes.
