Preparation

  • Wash the broccoli florets under running water and chop them into bite-sized pieces.
  • Slice the cherry tomatoes in half to release their sweetness.
  • Finely dice the red onion and grate the carrots if they aren't pre-shredded.

Mixing the Dressing

  • In a separate bowl, whisk together the mayonnaise, apple cider vinegar, and sugar until smooth. Season with salt and pepper to taste.

Combining Ingredients

  • In a large mixing bowl, combine the broccoli, cherry tomatoes, red onion, and carrots.
  • Pour the dressing over the salad and mix gently until all ingredients are well coated.

Chill and Serve

  • Let the salad chill in the refrigerator for about 15-30 minutes before serving to allow flavors to meld.

Notes

For a lighter dressing, substitute half of the mayonnaise with Greek yogurt. Preparing the salad a day ahead enhances flavors. Avoid overcooking if blanching the broccoli.
