For the Salad

  • 4-5 cups fresh broccoli florets (about 2 heads of broccoli) Choose vibrant, farm-fresh broccoli for best flavor.
  • 1 cup shredded carrots
  • 1/2 cup red onion, finely chopped
  • 1/2 cup raisins (or dried cranberries for a twist)
  • 1/2 cup sunflower seeds or chopped nuts (optional)

For the Dressing

  • 1 cup mayonnaise Can be substituted with Greek yogurt for a lighter version.
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons sugar Feel free to adjust for sweetness preference.
  • Salt and pepper to taste Adjust seasoning based on preference.

Preparation

  • Start by washing the broccoli heads thoroughly under cool water. Cut the broccoli into bite-sized florets and set aside in a large mixing bowl.
  • Next, add the shredded carrots and finely chopped red onion to the bowl with the broccoli.
  • In a separate bowl, whisk together the mayonnaise, apple cider vinegar, and sugar until smooth. Make sure the sugar is fully dissolved for the best flavor!
  • Pour the dressing over the broccoli mixture and gently stir until all ingredients are evenly coated.
  • Toss in the raisins and sunflower seeds (if using). Season with salt and pepper to taste, adjusting as needed.
  • Cover the salad and refrigerate for at least 30 minutes to let the flavors meld together. Serve chilled for a refreshing crunch!

Notes

This salad makes a great side and can be enjoyed with grilled chicken or sandwiches. For best freshness, enjoy within the first two days. Separate the dressing for longer storage.
