  • 2 cups cooked chicken (diced, halal)
  • 2 cups broccoli florets (fresh or frozen, thawed)
  • 2 cups shredded cheese (cheddar or mozzarella) Reserve some for topping.
  • 1 cup cream of chicken soup (ensure halal-friendly)
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup bread crumbs (for topping, optional but recommended)
  • 1 tablespoon olive oil (optional, for a bit of richness)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the cooked rice, diced chicken, broccoli florets, shredded cheese (reserve a little for topping), cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper. Mix everything until well combined.
  • Pour the mixture into a greased 9x13-inch baking dish and spread it out evenly.
  • If using, mix bread crumbs with olive oil to create a crumbly topping. Sprinkle over the casserole along with the reserved cheese.

Baking

  • Place the dish in the preheated oven and bake for about 30 minutes, or until the top is golden brown and bubbly.
  • Allow the casserole to cool for a few minutes before serving.

Notes

For substitutions, try cauliflower or green beans instead of broccoli, or use quinoa or couscous instead of rice. Keep an eye on the casserole while baking to avoid overcooking.
