  • 4 pieces boneless, skinless chicken breasts Use similar sized pieces for even cooking.
  • 1 cup chicken broth
  • 1/2 cup fresh lemon juice (approximately from 4-5 lemons)
  • 2 pieces lemons Zest from these lemons is needed.
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh herbs for garnish (like parsley or thyme) Optional but recommended.

Preparation

  • Place the boneless, skinless chicken breasts in the slow cooker. Season them with salt and pepper.
  • In a medium bowl, combine the chicken broth, lemon juice, lemon zest, minced garlic, and dried oregano. Mix well.
  • Pour the sauce mixture over the chicken breasts in the slow cooker, ensuring they’re well coated.
  • Cover the slow cooker with its lid and set it to cook on low for about 6 hours or high for 3 to 4 hours until the chicken is tender and fully cooked.
  • Once cooked, shred the chicken with two forks and toss it in the citrus sauce. Garnish with fresh herbs before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. Reheat on the stove over low heat or in the microwave until warmed through. Don't skip the lemon zest for added flavor.
