  • 4 large flour tortillas

Preparation

  • In a bowl, whisk together the eggs, milk, salt, and pepper until well combined and fluffy.
  • In a medium skillet over medium heat, sauté the diced vegetables until they are tender, about 3-4 minutes.
  • Add the whisked eggs to the skillet with the veggies. Stir gently until the eggs are fully cooked but still soft. Mix in the shredded cheese until melted.
  • On another skillet or microwave, warm the flour tortillas for a few seconds to make them pliable.

Assembly

  • Divide the egg mixture evenly across the tortillas. Roll them up tightly, folding in the ends to secure the filling.
  • If you prefer crispy burritos, you can grill them in a pan for 1-2 minutes on each side until golden brown.
