  • 4 large eggs
  • 1/4 cup milk
  • 1 large bell pepper, diced any color you prefer
  • 1/4 cup onion, diced
  • 1 cup shredded cheese cheddar, Monterey Jack, or your favorite blend
  • 4 large flour tortillas
  • to taste salt and pepper

  • to taste fresh cilantro

Instructions
 

Preparation

  • In a bowl, whisk together the eggs and milk. Season with a pinch of salt and pepper.
  • In a skillet over medium heat, add a splash of oil and sauté the diced onion and bell pepper until they are soft.
  • Pour in the egg mixture and gently stir, cooking until the eggs are fluffy and fully cooked.
  • Lay each tortilla flat and place a generous portion of the egg mixture in the center. Top with shredded cheese.
  • Fold the sides of the tortilla over the filling, then roll from the bottom up to create a burrito shape.
  • Heat the burrito seam-side down in the skillet for a minute or until it’s golden brown, then flip to crisp the other side.
  • Serve warm with your choice of salsa, avocado, or cilantro on top!

Notes

Customize your burrito by swapping out the veggies or adding hot sauce or jalapeños for some heat. Prepare ingredients the night before for extra convenience. Wrap any leftovers tightly in aluminum foil and store in an airtight container in the fridge for 2-3 days.
