Ingredients
  

Cookies

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon baking powder
  • 1 pinch salt

Filling and Topping

  • 1/2 cup vanilla pudding mix (instant)
  • 1 cup chocolate frosting Use quality chocolate frosting for best results.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a separate bowl, beat the softened butter and granulated sugar until light and fluffy.
  • Mix in the vanilla extract. Gradually add the dry ingredients to the butter mixture until just blended.
  • Use a cookie scoop to drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes until the edges are golden.
  • Let the cookies cool on the baking sheet for a couple of minutes before transferring them to a wire rack to cool completely.

Filling and Assembly

  • Prepare the vanilla pudding mix according to package directions.
  • On the bottom side of half of the cookies, spread a spoonful of vanilla pudding. Then, place another cookie on top to create a sandwich.
  • Finally, drizzle or spread chocolate frosting over the tops of the sandwich cookies.

Notes

Store in an airtight container at room temperature for up to five days. Cookies can be frozen (without frosting) for up to three months.
