Cooking the Gnocchi

  • Begin by bringing a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions, typically 2-3 minutes until they float to the surface. Drain and set aside.

Preparing the Bolognese Sauce

  • In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery, sautéing until softened and fragrant, about 5-7 minutes.

Adding Tomatoes and Seasonings

  • Stir in the diced tomatoes and vegetable broth. Season with dried oregano, dried basil, salt, and pepper. Allow the mixture to simmer for 10-15 minutes, letting the flavors meld together.

Combining and Serving

  • When the sauce has thickened and is rich in flavor, gently fold in the cooked gnocchi, ensuring they are well-coated in the sauce. Cook for an additional 2-3 minutes to warm through.
  • Serve hot, garnished with fresh basil or parsley, and a sprinkle of grated Parmesan cheese if desired.

Notes

For a richer sauce, consider adding other vegetables such as bell peppers or zucchini. If you want to reduce cooking time, use store-bought gnocchi for convenience. Feel free to adjust the seasoning according to your taste; a splash of balsamic vinegar can enhance the flavor profile! Be mindful not to overcook the gnocchi after adding them to the sauce, as they can become mushy. If you have leftovers, store in an airtight container in the refrigerator for up to 2-3 days. Reheat on the stove over low heat, adding a splash of vegetable broth to maintain moisture.
