  • 2 pieces ripe peaches, sliced Select the ripest peaches for best flavor.
  • 1 cup fresh blueberries Make sure they are fresh and juicy.
  • 1 cup feta cheese, crumbled Can substitute with goat cheese if preferred.
  • 1/2 cup walnuts (or pecans), chopped Can swap for almonds or pistachios.

Dressing

  • 1/4 cup extra-virgin olive oil Quality oil enhances flavor.
  • 2 tablespoons balsamic vinegar

Preparation

  • Start by thoroughly washing your fresh mixed greens. Pat them dry with a clean towel or use a salad spinner. Place them in a large bowl.
  • Next, wash and slice the peaches. Remove the pit and slice them into wedges and set them aside.
  • Rinse the fresh blueberries under cool water, then gently add them to the bowl with the mixed greens.

Assembly

  • Crumble the feta cheese over the salad, followed by sprinkling chopped walnuts (or pecans) on top for added crunch.
  • In a small bowl, whisk together the extra-virgin olive oil, balsamic vinegar, salt, and pepper to taste. Drizzle this delightful dressing over your salad.
  • Gently toss all the ingredients together until well incorporated. Aim to coat the greens without crushing the fruit.
