  • 4 cups fresh spinach, washed and dried

Fruits

  • 2 pieces ripe peaches, sliced
  • 1 cup fresh blueberries, rinsed

Toppings

  • 1 cup feta cheese, crumbled
  • ¼ cup walnuts, roughly chopped (optional) Provides additional crunch

Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar (optional) Can be omitted based on preference

Preparation

  • Place the washed spinach in a large salad bowl.
  • Layer the sliced peaches and fresh blueberries over the spinach.
  • Sprinkle the crumbled feta cheese and chopped walnuts (if using) evenly across the salad.

Dressing

  • In a small bowl, whisk together olive oil and balsamic vinegar to create a light dressing.
  • Drizzle the dressing over the salad and add a pinch of salt and pepper.

Serving

  • Gently toss the ingredients to coat with the dressing without bruising the fruits.
  • Enjoy immediately or chill in the fridge for up to 30 minutes before serving.

Notes

For best results, make the salad just before serving. Avoid overdressing and store leftovers in an airtight container for up to 2 days.
