Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the cottage cheese and eggs, whisking until smooth.
  • Slowly add in the almond flour, baking powder, and salt, stirring until just combined.
  • Gently fold in the blueberries, being careful not to crush them.
  • Pour the batter into a lined or greased baking dish, like a loaf pan or cupcake tin.
  • Bake for 25-30 minutes or until the bread springs back when lightly touched.
  • Allow to cool slightly before slicing and serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to four days, or freeze individual slices for up to three months. Reheat in a toaster oven when ready to enjoy.
