Preparation

  • Preheat your oven to 350°F (175°C). Grease a baking dish with a bit of cooking spray.
  • In a large mixing bowl, combine the cottage cheese, eggs, honey (or maple syrup), vanilla extract, and salt until well-blended.
  • Gently fold in the rolled oats, baking powder, and fresh blueberries into the mixture, ensuring they are evenly distributed.
  • Transfer the mixture to the greased baking dish, spreading it out evenly.
  • Place the dish in the preheated oven and bake for 30-35 minutes or until the top is golden and a toothpick inserted into the center comes out clean.
  • Allow the dish to cool for a few minutes before slicing. Serve warm topped with additional fresh blueberries or a sprinkle of nuts.

Notes

If you have any leftovers, store them in an airtight container in the refrigerator for up to four days. Reheat a slice in the microwave or oven when ready to serve. You can also freeze individual portions for up to three months.
