Ingredients
  

For the marinade

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cubed Thighs are recommended for juicier results.
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons minced garlic
  • 1 tablespoon ginger, minced
  • 1 tablespoon brown sugar or honey

For the grill

  • 3 cups mixed vegetables (zucchini, bell peppers, onions, carrots) Chop into even pieces for uniform cooking.

Preparation

  • In a bowl, combine soy sauce, sesame oil, minced garlic, ginger, and brown sugar, stirring until well mixed. Add the cubed chicken and marinate for at least 30 minutes (or up to overnight).
  • While the chicken is marinating, chop your vegetables into even pieces for even cooking.

Cooking

  • Preheat your Blackstone griddle over medium-high heat and spray it lightly with cooking oil.
  • Place the marinated chicken on the griddle and cook for about 6-8 minutes, stirring occasionally, until golden brown and cooked through.
  • Push the chicken to one side of the griddle and add your prepared veggies to the other side. Cook for about 5-7 minutes until tender-crisp.
  • Once the veggies are cooked, mix everything together for an additional minute.
  • Serve hot, garnished with sesame seeds and chopped green onions if desired.

Notes

For maximum flavor, allow chicken to marinate for several hours or overnight. Use a variety of vegetables according to your preference. Avoid overcrowding the griddle for better grilling results. Store leftover in an airtight container for up to 3 days, or freeze for up to 2 months.
