  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon dried oregano
  • 1 tablespoon cayenne pepper adjust to taste
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 2 tablespoons olive oil (for cooking)
  • 1 pieces Fresh lemon wedges (for serving)

Preparation

  • In a small bowl, mix together the paprika, garlic powder, onion powder, dried oregano, cayenne pepper, black pepper, and salt to create the blackening seasoning.
  • Pat the chicken breasts dry with paper towels. Coat each breast generously with the spice mix on both sides, ensuring each piece is well-seasoned.

Cooking

  • In a large skillet, heat the olive oil over medium-high heat until shimmering.
  • Carefully add the seasoned chicken to the pan. Sear the chicken for 5-7 minutes on each side until a dark crust forms and the internal temperature reaches 165°F (75°C).
  • Once cooked, transfer the chicken to a cutting board and let it rest for a few minutes before slicing. Serve with fresh lemon wedges for an extra burst of flavor.

Notes

For perfect blackened chicken, adjust the cayenne pepper for desired spiciness, ensure the pan is hot before cooking, and allow the chicken to rest after cooking to retain its juices. This dish can also be grilled for a smokier flavor.
