Black Pepper Chicken with Mushrooms

Ingredients
  

Chicken and Marinade

  • 1 lb chicken breast, sliced into thin strips
  • 3 tablespoons soy sauce
  • 2 tablespoons black pepper Adjust according to your spice preference

Vegetables

  • 8 oz mushrooms, sliced Button or cremini mushrooms work well
  • 1 tablespoon ginger, minced Use fresh for the best flavor
  • 2 cloves garlic, minced Use fresh for the best flavor
  • 2 green onions, chopped For garnish

Cooking Ingredients

  • 2 tablespoons vegetable oil Or any cooking oil of choice
  • 1 tablespoon cornstarch Optional for thickening
  • Salt to taste

Preparation

  • In a bowl, combine the sliced chicken breast with soy sauce and a tablespoon of black pepper. Let it marinate for about 10-15 minutes.
  • While the chicken marinates, clean and slice the mushrooms. Set them aside.

Cooking

  • In a large skillet or wok, heat the vegetable oil over medium-high heat until hot.
  • Add the marinated chicken strips to the skillet in a single layer. Allow it to sear without stirring for about 3-4 minutes until golden brown.
  • Stir in the minced garlic and ginger, cooking for an additional minute until fragrant.
  • Add the sliced mushrooms to the pan and sauté everything together for about 5 minutes, or until the mushrooms are tender.
  • If you prefer a thicker sauce, mix cornstarch with a tiny bit of water to create a slurry and stir this in. Cook for another 2-3 minutes until the sauce thickens to your desired consistency.
  • Add the remaining black pepper and salt to taste. Garnish with chopped green onions before serving.

Notes

For best results, use fresh ginger and garlic. Feel free to add other vegetables, such as bell peppers or broccoli, to increase nutrition and color. Watch the cooking time to avoid overcooking the chicken.
