Ingredients
  

Brownie Base

  • 1 cup unsalted butter Melted
  • 2 cups granulated sugar
  • 1 cup brown sugar Packed
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • ½ teaspoon salt
  • 1 cup cherries, pitted and chopped Fresh or frozen
  • 1 cup chocolate chips

Preparation

  • Preheat your oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.
  • In a medium saucepan, melt the unsalted butter over low heat. Remove from heat and stir in both the granulated and brown sugar until well combined.
  • Allow the mixture to cool slightly, then add in the eggs one by one, mixing well after each addition. Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, cocoa powder, and salt. Gradually add the dry mixture to the wet ingredients, stirring just until combined.
  • Fold in the chopped cherries and chocolate chips gently until evenly distributed in the brownie batter.

Baking

  • Pour the batter into the prepared baking pan, smoothing the top with a spatula. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  • Allow the brownies to cool in the pan for about 15 minutes before transferring them to a wire rack to cool completely.

Serving

  • Once cooled, slice into bars, top with whipped cream, and garnish with chocolate shavings.

Notes

For best results, use high-quality cocoa powder and chocolate chips. When using frozen cherries, drain and pat them dry to avoid excess moisture. Store in an airtight container at room temperature for up to 3 days, or refrigerate for an extra 1-2 days. Freeze for up to 3 months.
