Filling Ingredients

  • 2 cups fresh spinach, chopped Always use fresh spinach for best flavor.
  • 1 cup grated Parmesan cheese Freshly grated is best.
  • 1 cup ricotta cheese
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper Adjust to taste.
  • 1/4 teaspoon red pepper flakes (optional) For a spicy kick.

Wrapping Ingredients

  • 1 package wonton wrappers
  • as needed spray cooking oil spray (or olive oil) For adding a golden color.

Preparation

  • In a mixing bowl, combine chopped spinach, Parmesan cheese, ricotta cheese, minced garlic, salt, pepper, and red pepper flakes (if using). Mix well until evenly incorporated.
  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Assembly

  • Take a wonton wrapper and place about a tablespoon of the spinach mixture in the center.
  • Carefully fold the wrapper into a triangle and seal the edges with a bit of water.
  • Lightly spray the folded wontons with cooking oil or brush with olive oil.

Baking

  • Bake in the preheated oven for 15-20 minutes or until snacks are crispy and golden.
  • Remove from the oven and allow to cool slightly before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place on a baking sheet and warm at 350°F (175°C) for 10-15 minutes. For longer storage, freeze unbaked wontons and bake from frozen, adjusting cooking time accordingly.
