- 1 lb breakfast sausage
- 1/4 cup all-purpose flour
- 2 1/2 cups milk divided
- salt and pepper to taste
- 1 can refrigerated biscuits 16.3 oz, cut into quarters
- 6 large eggs
- 1/2 cup milk
- 1 cup shredded cheddar cheese
Preheat oven to 375°F and grease a 9×13-inch baking dish.
In a large skillet, cook 1 pound of breakfast sausage over medium heat, breaking it into crumbles, until browned and fully cooked.
Sprinkle 1/4 cup of all-purpose flour over the cooked sausage and stir to coat. Gradually whisk in 2 1/2 cups of milk, stirring constantly, until the mixture thickens. Season with salt and pepper to taste. Remove from heat.
Cut 1 can (16.3 oz) of refrigerated biscuits into quarters and arrange half of the biscuit pieces in the bottom of the greased baking dish.
Pour the sausage gravy evenly over the biscuit layer. In a mixing bowl, whisk together 6 large eggs and 1/2 cup of milk, then pour over the gravy. Top with 1 cup of shredded cheddar cheese and arrange the remaining biscuit pieces on top.
Bake the casserole in the preheated oven for 30-35 minutes, or until the biscuits are golden brown and cooked through.
Let the casserole cool for 5 minutes before slicing and serving.
