  • 2 tablespoons olive oil
  • 1 unit bell pepper, sliced
  • 1 unit onion, chopped
  • 3 cloves garlic, minced
  • 1 can (15 oz) coconut milk
  • 2 tablespoons Cajun seasoning

Preparation

  • Begin by boiling water in a large pot. Cook the pasta according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add the chopped onions and sliced bell pepper, sautéing for about 5 minutes until softened.
  • Stir in the minced garlic and sauté for another minute until fragrant.
  • Pour in the coconut milk and sprinkle in the Cajun seasoning. Allow the mixture to simmer for about 5 minutes.
  • Add the drained pasta to the skillet, mixing well to ensure all noodles are coated in the creamy sauce. Season with salt and pepper to taste.
  • Plate your delicious Cajun-style vegan pasta and top it with freshly chopped parsley or green onions if desired.

Notes

To store leftovers, let the pasta cool completely, then transfer it to an airtight container. It will stay fresh in the fridge for up to 3 days. When reheating, add a splash of coconut milk or water to revive the creaminess.
