- 4-5 medium-sized fresh peaches peeled, pitted, sliced
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup butter melted
- 1 1/2 cups all-purpose flour
- 1 cup rolled oats
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
Prepare the peaches by peeling, pitting, and slicing the fresh peaches, then toss them in a bowl with 1/4 cup of granulated sugar and set aside to marinate while you prepare the crumble.
Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
In a separate bowl, mix together the melted butter, remaining granulated sugar, brown sugar, flour, oats, cinnamon, baking powder, and salt, stirring until everything is well combined, creating a crumbly mixture with a texture that resembles wet sand.
Spread half of the crumble mixture evenly in the bottom of the prepared baking dish.
Spoon the marinated peaches over the crumble layer.
Evenly scatter the remaining crumble mixture on top of the peaches.
Place the dish in the preheated oven and bake for about 30-35 minutes, or until the top is golden brown and the peaches are bubbly.
Allow the bars to cool for at least 10-15 minutes before slicing, then serve warm.
