  • 3 ripe bananas, mashed The riper the bananas, the sweeter the bread.
  • ½ cup melted butter
  • 1 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • a pinch salt
  • 1 ½ cups all-purpose flour Do not overmix when adding.

Preparation

  • Preheat your oven to 350°F (175°C).
  • Mash the ripe bananas in a mixing bowl until smooth.
  • Stir in the melted butter until well blended with the bananas.
  • Mix in the sugar, beaten egg, and vanilla extract until combined.
  • Sprinkle in the baking soda and salt. Stir to combine, then slowly add the flour. Do not overmix!
  • Pour the batter into a greased 9x5-inch loaf pan, smoothing the top if necessary.
  • Place the pan in the preheated oven and bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Notes

Wrap any leftover banana bread tightly in plastic wrap or aluminum foil to keep it fresh. Store at room temperature for 2-3 days, or refrigerate for longer storage. Reheat in the microwave for 10-15 seconds if desired.
