  • 1 cup diced cucumber (fresh)
  • 1/2 cup diced bell peppers Choose your favorite colors.
  • 1/4 cup red onion (finely chopped)
  • 1/4 cup parsley (chopped fresh)
  • 1/4 cup feta cheese (optional) Use tahini for a vegan variant.

Dressing

  • Juice of 1 lemon
  • 2 tablespoons olive oil

Preparation

  • Cook the Bulgur Wheat: In a medium saucepan, combine 1 cup of bulgur wheat with 2 cups of water. Bring it to a boil, then cover and let it simmer for approximately 12-15 minutes until all the water is absorbed. Once done, remove from heat and fluff with a fork; let cool.
  • Prepare the Vegetables: While your bulgur is cooling, dice your cucumber, bell peppers, and finely chop the red onion and parsley.
  • Combine the Base: In a large mixing bowl, combine the cooled bulgur, chickpeas, diced cucumber, bell peppers, red onion, and chopped parsley.
  • Make the Dressing: In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Taste and adjust seasoning according to your preference.
  • Dress the Salad: Pour the dressing over the salad mixture, gently tossing to ensure that all the ingredients are well coated.
  • Add Toppings: Sprinkle your feta cheese over the top, if using, and give the salad a final toss.
  • Serve: You can serve this salad immediately or let it sit for about 10-15 minutes to allow the flavors to meld together beautifully!

Notes

For substitutions, feel free to swap out chickpeas for other legumes like black beans or kidney beans.
